St. Patricks Day cupcakes | Recipe

We’re only a few days into March and I can already spot the daffodils blooming in the fields and noticing the days getting ever-so-slightly longer. Spring is on route and I cannot wait to see her. I just hope she brings some sunshine with her! However, first things first – St. Patricks day is next week and in keeping with my promise to share more recipes on the blog, here’s my latest creation…

You cannot celebrate any family fun event without cupcakes – or any form of cake for that matter. However, on this occasion, I am sharing some delicious St Patricks Day cupcakes. They are going to be simplistic, green {naturally} and cute as heck.

**These ingredients will make a batch of 12 St Patricks Day cupcakes**

Make your own St Patricks Day Cupcakes

You will need – 

  • 6oz/175g of butter {at room temperature}
  • 175g Caster sugar
  • 175g Self-Raising Flour
  • 1/2tsp vanilla extract
  • 1/2tsp baking powder
  • 3 large eggs

You’ll need to – 

  • Preheat your oven to 180°C/Gas Mark 4 and line your cupcake/muffin tin with bun cases.
  • For cupcake recipes, I am a dump everything in the bowl and mix kind of girl! So just add everything into your bowl and beat with your hand mixer until all of the ingredients are well combined.
  • Divide your mixture evenly between your 12 bun cases. Each bun case should be around 2/3rds full. 
  • Bake for 20-25 minutes or until the cakes are firm on top. 
  • Transfer to a wire rack and allow to fully cool.

For your icing, you’ll need – 

  • 175g butter {at room temperature}
  • 350g sifted icing sugar
  • 3 tsp. milk
  • 1/2 tsp vanilla extract
  • Green sugar sprinkles for decorating
  • Gold chocolate coins

To make your icing, you’ll need to – 

  • Add your butter, vanilla extract, 2 tsp of milk and half of your icing sugar into a bowl. If you use your stand mixer, as I do, you will beat the ingredients together for around 3 mins, on high speed. This also provides the buttercream with a nice white appearance, too. 
  • You will then add the remaining icing sugar and mix – adding the remaining milk {if required} to gain the right consistency.

From this point, all you have to do is pipe on the buttercream to your St Patricks Day cupcakes, sprinkle on some green sugary crystal goodness and add that all-important gold coin. Then voila! You have yourself a batch of delicious looking St Patricks Day cupcakes.
