A very cheeky S’mores Brownie recipe

Here in the UK, S’mores really aren’t our thing. They’re America’s little treasures! However, the more and more camping I have seen on Instagram or Facebook, around Northern Ireland and the UK mainland, s’mores are becoming more and more the must-have food on the menu! Who can blame them as they are pretty incredible! The crunch of the digestive biscuit {because we cannot get graham crackers over this side of the world}. The melted chocolate, the gooey marshmallows – Delicious! I’ve shared a few brownie recipes here on the blog, such as my Bourbon Biscuit Brownie recipe and my Mint Aero chocolate brownies recipe. Both are incredible, both are seriously delicious and you’re welcome! So, for this recipe, I will be sharing – like you haven’t guessed already – a S’mores Brownie recipe. It’s a dream come true, right? I’m so excited!

S’mores Brownie Recipe

This recipe is insanely easy {and fun} to put together and the excitement for them to be ready to eat was off the chart. My kids love nothing more than toasting marshmallows over a campfire, but when presented with digestive biscuits and chocolate pieces – they are the happiest of campers. So, why not blow their minds with all of that sweet, gooey goodness all packaged up into a brownie!

Ingredients

I use this foolproof brownie recipe which I sourced from Toby & RooIt’s perfect and I use nothing else! However, for this s’mores brownie recipe I obviously modified it according.

For the s’mores topping, you’ll need:

Marshmallows. The brand I found best for this was the Princess mallows. The melted perfectly whereas the little mini marshmallows went quite hard & crispy. Not all gooey & melted like the other, bigger marshmallows. 
Chocolate chips

That’s it! The trick is to partly cook your brownies {for around 15 mins}, bring it out, top with your chocolate chips and marshmallows then place back into the oven for a further 10 mins. Making sure your marshmallows do not burn. Every oven is different, so it’s hard to judge how your oven will work. So, just play this part by ear. Or eye! You know what I mean!

Be warned, these are very sweet but really tasty! From this batch, I was able to cut around 25 pieces of s’mores brownie. We gave half to a friend and kept the rest to indulge in ourselves.

These were seriously fun to make, but as mentioned – they are very sweet but really are tasty {and very cheeky} s’mores brownies! I am living for all of the brownies I am making lately.
