Mint Aero Chocolate Brownies Recipe

There was a post I wrote back in 2014 and even now it is still my most popular post on the blog. Which is crazy! Who knew a simple no-bake Mint Aero Cheesecake recipe would be so popular. But it is and I couldn’t be happier because it is one hell of a delicious cheesecake! So I thought it was about time I made something else ‘minty’ and I had a light bulb moment. Mint Aero Brownies! Genius, right? I cannot tell you how excited I am for these and with it being the weekend, I thought, why not whisk them up today! No time like the present, right?
Before I share the recipe, I am going to have a little revelational moment with you all. Is revelational even a word? It sounds like it is so I’m just going to run with it. I turn forty next month {holy crap!} and I had this whole epic journey idea of how I was going to be ‘fit for forty’. Clearly, that has not happened. I think, if anything, with experiencing this whole global pandemic, the lockdown etc. I have gained rather than lost and sure, that makes me a little annoyed. But what the hell. You only live once so why not be happy regardless! And happiness for a lot of us comes in the shape of a brownie!
The original recipe for these brownies, I found over on Toby & Roo’s Instagram stories, but I have just modified it for this Mint aero brownie recipe.
Now, let’s begin this epic quest to create these tasty little creations!

Mint Aero Brownie Recipe
First things first, ingredients! And here is everything you will need:
1 cup of granulated sugar
1/4 cup of soft brown sugar
75g melted butter
3 eggs
3/4 cup of cocoa powder
1/3 cup of oil
1/2 cup of plain flour
A pinch of salt
1-2 tsp of peppermint extract
150g of mint aero chocolate or mint aero bubbles
Once you have all of your ingredients laid out before you, now you can start creating these tasty treats! It won’t be long before you can devour them whole – no judgement here.

Method
Preheat your oven to 200°C and line your tray with parchment paper. Get yourself a large bowl and just bosh everything in together and stir until well combined. I have tried this recipe by adding certain ingredients, combining and adding more etc. And I have also tried this method, by putting everything in together and what did I learn? It makes no difference. Adding everything in together won’t work with all recipes, but I have tested this one and the outcome is just the same.
Once your ingredients are combined, pour your brownie batter into your lined tray and pop into the oven for 25-30 mins. The toothpick test won’t work on these as they are naturally gooey and fudgy. But trust me, at 200°C for 25 mins, they’ll be ready.

Please allow them to cool completely, on a wire rack before cutting. I know the delicious smell is very tempting. Believe me, I know! But if you cut them too soon, they’ll be all crumbly! So, wait for a good 30-40 minutes before cutting them and that way you’ll get perfect squares!
Now all you need to do is to pop the kettle on or get yourself a glass of milk. Personally, I’m partial to either or. I’m not fussy! And enjoy!
