Simple Easter Shortbread Cookie Recipe

I bloody love shortbread! It’s such an easy biscuit to make and it tastes delicious. All of that crumbly, buttery yumminess? Yes, please! I don’t think you can ever go wrong with a batch of shortbread, which is why I am using shortbread again for this simple Easter shortbread cookie recipe. 

Ever since icing Annabelle’s birthday cookies this year, I have been keen to perfect my icing skills. I still have a long way to go but I think these simple Easter shortbread cookies were good practice. They are also great to have on your table on Easter morning, or maybe you have an Easter picnic planned {in your garden of course – hello lockdown!}, or maybe just for afternoon tea. 

This shortbread recipe is the one I have used many times before, but I will share it in this post for you. It’s foolproof and never fails me. The icing concept is the same too, just aim to get the right consistency with your royal icing. You want it nice and thick so it doesn’t run off the end of your cookies. Then pipe away!

If you’ve never given piping a go before, here’s how I do it. I pipe the outline of my cookie first i.e. if it’s an egg or a chick. Leave it to dry before flooding the centre of the cookie. You can go even further & allow that to dry before adding any other designs. Such as zigzags, spots, lines and more. Whatever you want!

Bake up a huge batch of cookies, whip up a good portion of royal icing {in different colours}, put into piping bags and let them design their cookies. Maybe they can even deliver a batch to their Grandparents once they’re ready! We did. Due to the current global pandemic, we just left them on their doorstep with a little note during our daily exercise outside. Either way, these are fun and simple cookies to make and will be the perfect addition to anyone’s Easter treat table.

Here is my foolproof shortbread recipe

125g/4oz Unsalted Butter {at room temperature}
55g/2oz Caster sugar
180g/6oz Plain flour

Putting it all together!

Preheat your oven to 180 degrees and line a baking tray with parchment/greaseproof paper. 

Beat your butter & sugar together until well combined. It should be nice and light & fluffy. 

Stir in your flour and mix together until it forms a dough. 

Sprinkle flour on your table and roll our your shortbread dough to 1cm thickness & cut into shapes.

Place on the baking tray & bake in the oven for 20mins or until they are golden brown. 

Allow too cool fully on a wire rack before icing them.

A super simple, foolproof Shortbread recipe to create with the family this Easter. We created these adorable little flowers and chicks. As you can see, my piping skills are still not great but I am getting there!
