Rhubarb & Custard Butterfly buns – Recipe!

When I was wee I remember with the fondest of memories, my mother baking in the kitchen. I have quite vivid memories of her happily baking, and she was forever rustling up cakes & buns for us to indulge in when we had visitors come round. One treat, in particular, I remember her baking quite often was the infamous butterfly buns.
As a child {and even now at the grand age of 34!} I loved to remove the wings, scoop up a dollop of buttercream & enjoy the life out of that thing! They were a gorgeous treat and I love that on this day, which just happens to be my Mothers birthday {she would have been 56 yrs young – she hated the idea of getting older!}, that I’m sharing with you the recipe she used plus a little additional tastiness of my own.
I’ll be using this delicious Rhubarb & Custard jam {which tastes just like the Rhubarb & custard sweeties from the shops!} on my butterfly buns in this recipe and I cannot wait to taste them!

Ingredients:-
– 4oz softened butter/margarine.
– 4oz caster sugar.
– 2 free-range eggs, lightly beaten.
– 4oz self-raising flour.
– 1 tsp vanilla extract.
– 1-2 tbsp of milk.

I really enjoyed making these and I cannot believe how much the rhubarb and custard jam actually tastes like the sweeties!! My mind is so totally blown! These went down not only great with the family but with a warm cup of tea too!

Ahh! Butterfly buns are such a delicious treat. I remember them from my childhood too. Using rhubarb and custard jam sounds like a great addition. x

The Mother says – I’ve been reading quite a few recipe posts recently and they all start off with a nostalgic note.
