Party Ring Rocky Road recipe

Are you looking for a simple recipe to make with the kids this week? Who isn’t right? I live for simple recipes to make with my gang and this one is both simple and tasty – so it’s a win all round. Have you ever made a batch of party ring rocky road? Neither had I until I found this recipe on the Sainsbury’s website. It’s also a ‘no-bake’ recipe, which is music to lots of parents ears and it’s made with only 3 ingredients.
I have always associated rocky road with being milk chocolate? So I am loving the white chocolate approach and then the party rings do add a certain level of nostalgia to the recipe, too. Throw in some mini marshmallows and you have yourself a tasty batch of party ring rocky road treats. All you need to do is cut them into squares, put the kettle on, put your feet up and enjoy.

But first…you need to make these bad boys…
Here’s what you’ll need:
- 400g white chocolate, finely chopped
- 50g of diced, unsalted butter
- 1 packet of regular-sized party rings or 6x21g bags of mini party rings
- 75g of rich tea biscuits
- 100g of mini marshmallows

The how-to part:
- Melt your white chocolate
- Mix in all of your ingredients {it’s that simple!}
- Line a baking tray with parchment and pour in your mixture
- Flatten it down as much as you can.
- Pop in the fridge for an hour to set.

Delicious and simple and the perfect treat to enjoy any day of the week! My gang loved these and have been pestering me to make more ever since, so I had best get to it before they linch me!
