Back to School Lunchbox Challenge with Tesco

The kids are all Back to school now {Hurrah!} and Tesco recently got in touch asking me to get involved in a little challenge of theirs. They kindly sent me out a selection of local produce from around Northern Ireland and challenged me to make a selection of tasty lunchbox treats for my children’s school lunches. 

Not being one to back down from a challenge, I accepted. 

I have quite fussy children – my son especially and with my littlest lady being so impressionable {and she looks up to him like he is just the best Big Brother & role model in the entire world!} so if he starts pulling the ham out of his sandwiches, she will too. If he suddenly goes off the idea of sausage rolls – then she’ll follow suit. It’s exhausting. It’s frustrating and quite frankly, it makes putting their lunches together a little difficult. 

However, with the help of these local products I have put together a few little bits that I can slip into my children’s school lunches and hopefully they’ll go down a treat! 

Ham & Cucumber sushi 

These are such a cute & simple idea to pop into any lunchbox. Thankfully not having lunch with her big Brother, Annabelle will actually eat her ham when she’s not sitting next to him! And she loves cucumber – so these are thoroughly enjoyed by her over lunch. You can find how to make them, here

Cherry & chocolate chip oaty bars

Another Pinterest find! Well, a modified recipe because it was actually for strawberry oat bars – but the ingredients I was given included Cherry’s, thus my reason to make some Cherry & chocolate chip oaty bars! A really easy, no-bake recipe to put together.

So, Tesco challenged me and I delivered. I think I did pretty well and I’d be lying if I wasn’t excited by the new additions to the children’s lunchboxes! I hope the kids enjoy them too!

    The chocolate and cherry bars look SO good, I’d quite happily take one of those in my little work lunch box. My daughter was such a fussy eater when she was younger too, it makes meals such a nightmare doesn’t it.

    I love the sounds of the cherry and chocolate chip oaty bars. I need to try and make so snacks with oats for the kids to help keep them going between school and tutors.
