AD | Chicken & Broccoli Stir Fry recipe with Hello Fresh

I am not very adventurous with food. There, I said it and I never have been. It’s just not how I was raised. I was raised on the good old-fashioned Irish diet which was a staple of stereotypical potatoes, meat and stews. And I was totally fine with that and to this day, I still am. However, the older I get, the more adventurous I wish I was as it would open so many doors of the foodie world for me. But instead of leaping straight into unknown food territories. I am trying to branch out to things I am pretty sure I know I would like and also meals I am hopeful my family would enjoy too. I have teamed up with Hello Fresh to recreate their Chicken and Broccoli Stir Fry recipe from their website.

This dish ticks all of the boxes for me. All of the ingredients used in this recipe are delicious, it’s also a little spicy which I am here for. And it’s also one of those dishes that can be prepped and ready in 30 minutes. Which as a busy parent, is music to my ears!

However, let me tell you a little bit more about Hello Fresh before we dive into this delicious recipe.
What is Hello Fresh?
I am sure you have heard of Hello Fresh by this point, right? If not, I am quite sure you have been living under a rock! Hello Fresh is the UK’s leading recipe box. It is a meal subscription box that you can tailor to your likes and requirements.

You can pick three to five recipes per week, with portions for either two or four people. The menus available through Hello Fresh are varied week to week and you can choose the meals a few days before your boxes of fresh ingredients are shipped out. With free delivery too, might I add!
Chicken & Broccoli Stir Fry Recipe

Just to also clarify, the allergens in this dish are the following: Egg, Gluten, Soya & Peanuts. But it is really easy to make and incredibly tasty!
Ingredients
- 280 grams of diced chicken thigh {for this recipe, I prefer chicken breast, so that’s what I used}
- 1 Spring Onion
- 1/2 lime
- 1 Bell Pepper
- 1 sachet of Ketjap Manis {this is a sweet soy sauce}
- 2 cloves of garlic
- 1/2 red chilli
- 1/2 broccoli floret
- Egg noodles – 1 packet
- Soy sauce – 1 sachet
- 1 sachet of peanut butter {we did not add this as we are not peanut butter fans}
- 50ml of water for the sauce

Method
First things first, drizzle some olive oil into the base of your large frying pan and place on high heat. Once your pan is ready, add in your chicken and cook until brown. Once your chicken is cooked {which should take between 8-10 mins} transfer it to a plate but keep your pan for the next part! Turn your hob down to prevent any accidents.
Fill and boil your kettle and then start chopping up your vegetables. Peel and grate your garlic. I don’t have a grater or a garlic press, so I just chopped mine up as finely as I could. Trim & slice your spring onions and cut your chilli lengthways, remove the seeds and finely chop. Next, you want to zest & cut your lime into wedges. For your broccoli, cut it into florets, until they look like small trees, then half your bell pepper {removing the core and seeds} and slice into thin strips.

Place your empty pan back onto the high heat, add in your broccoli and peppers and stir until golden. On another hob, bring a saucepan of water to the boil, add in a pinch of salt for the noodles. Once the water in the saucepan is boiling, add in your noodles. Once your noodles are ready {which should take 4-5 mins} drizzle a little oil over the top to prevent them from sticking together. Trust me, it helps!
Add your garlic and chilli into your pan, add in a splash of water to help your vegetables cook through. As those are cooking, whisk your ketjap manis, soy sauce and peanut butter {if you choose to use it} in a jug with water until well combined.

Once you have made your mixture, add your chicken back into the pan as well as the noodles and the peanut butter mix. Cook together until everything is piping hot.
We’re almost there…
Share your delicious creation into plates or bowls, sprinkle a little lime zest over the top with your spring onions. You might like your dishes a little extra spicy, so add any leftover chilli over the top and then squeeze a lime wedge over the top.
