Super simple Slow Cooker Meatball Sub Sandwiches

Having one meal that all or most of my family will eat is harder to accomplish than you might think. Most evenings we make 2, maybe 3 different dishes and in all honesty, it drives me insane. So, finding a dish that 4 out of the 5 of us will eat is a victory in my eyes! Slow Cooker Meatball sub sandwiches are the new craze in our house. Not only are insanely simple to put together, but they also taste incredible and they are the perfect Autumn dish to serve up to the family! They’re also perfect for those busy days of the week!
This dish is now a weekly staple in our home and it’s nice to not have to fuss over several different things being cooked at once. Got to love fussy kids, right? Not! Anyways, Jacob did try these and liked them for a solid minute before declaring that no, these were not for him. Queue the eye roll from me, accompanied by an exasperated sigh – you know the one!
For the rest of us though, this slow cooker Meatball Sub Sandwich recipe is life and will be a sure-fire hit with your family, too. In the slow cooker, the meatballs turn into these hot, soft meaty spheres of absolute joy and they taste unbelievable.

Little tip? Use a good sturdy finger roll because you will need something to hold its own with the sauce and the weight of the meatballs. We use Ormo Finger rolls here in Northern Ireland and they’re perfect.

These Meatball sub sandwiches also go great with chips or our personal favourite, homemade potato wedges. Not leaving out a little cheeky side salad {peppers, onions and lettuce please!}.

Ahh! My girls love these! We tend to have meatballs cooked in the slow cooker and spaghetti one day and the next day we have the leftover meatballs in buns. I always make extra. hehehe x
