Slow cooker Chocolate chip cookie dessert Recipe

I love two things in life, desserts & my slow cooker. So, I thought, why not try to create something with both dessert & my slow cooker in mind. That’s when I had a light bulb moment. My husband has been asking me forever to make him a delicious Chocolate Chip Cookie dessert, like the one you can get in some restaurants? It would be served warm with a scoop of ice cream on the side? Amazing! So I thought, why not give that a go. So I did. It’s amazing and I am going to share the recipe with you gorgeous bunch. This one of many delicious slow cooker recipes that I am looking to share with you guys!

This is not only a super easy slow cooker recipe but it is crazy delicious, so give it a go and let me know what you think!

Slow cooker chocolate chip cookie dessert

I don’t know about you guys, but with everything else going on in the world right now, I have found solace in baking. I’ve not been baking as much as I did back when we were in a full national lockdown. But I’m still keeping us all happy and topped up with the odd baked treat. This Chocolate Chip Cookie dessert, however, has hands down been their favourite treat to date. I’m also super proud of how it turned out, even if it is one of those recipes that you cannot possibly mess-up!

Chocolate chip cookie recipe

This has been my first baked treat created in my slow cooker, which I usually just use to make bolognese and casseroles. However, after this recipe success, I want to make more!

This recipe takes 5-10 mins to prepare, 2 & 1/2-3hrs {on high} or 5-6hrs {on low} heat to bake and serves 10-12 people. It can also be kept warm in your slow cooker for up to 3hrs after it’s ready.

Ingredients

100g Caster sugar
100g softened butter
1 Large egg
75g Brown sugar
200g Plain flour
1 tsp Vanilla extract
Large pinch of salt
1 tsp Baking soda
250g Chocolate chips

Method/Directions

First things first. Grease your slow cooker bowl and place two strips of parchment paper in an ‘X’ formation. This will help you to lift it out of the slow cooker once it is ready.

Add your butter & sugars into a bowl and mix together either by hand or with a mixer {for around 2 minutes} until light and fluffy. Slowly beat in your egg and add your vanilla extract.

Next, you’ll want to add your flour, baking soda and salt and mix until they are all fully combined. Fold in your chocolate chips and at this point, you’ll see you have a gorgeous cookie dough consistency.

Add your cookie dough into your slow cooker and smooth the top over with a spatula. Cover and cook on a high heat {which is what I did for this recipe} for 2 1/2 to 3hrs.

An absolutely delicious and super simple recipe to create for the family. A warm chocolate chip cookie with a dollop of ice-cream is just the most perfect dessert or even for just a treat!
