Recipe – Mini Chicken Pot Pies

Like anyone else, I love a good meat filled pie. Usually with a side order of potatoes, vegetables with a delicious helping of gravy. Plus, nothing beats hearing the crust crack as you cut into the top it of it too. Or is that just me?
But when it comes to catering for the masses at say, a party {or a small gathering of folk} for example, I like to make things smaller to make in bulk to serve up to my guests. So, this week’s recipe is for Mini Chicken pot pies.

If I’m honest – I have only ever, in my ‘almost’ 36 years on this planet, made one homemade pie. Isn’t that a travesty? Especially as a Mummy to a large family of mouths to feed. But, 2016 is to be the year to banish the fussy eaters in the family & get us all eating the same dish at the table each night. Or at least, that’s the plan. I guess starting small is also a good way to venture into those realms too. I hope.

So these ridiculously cute Chicken pot pies are sure to be a hit with the fam-bam. The shortcrust base with the succulently tasty chicken & vegetable filling – how could they possibly resist, right?

Chicken pot pie recipe


– 2 packet of Just roll Shortcrust pastry. {or you can make it yourself! I’m too busy for that malarky!}
– Frozen vegetables, thawed.

– 2 breast of chicken cut into small pieces. {makes 12 mini pies}
– 3in cookie cutter.

– Cupcake pan
– Chicken gravy.

– Pre-heat your oven to 220 degrees.
– Lay out your shortcrust pastry and cut out your circles.
– Press them into the sections of your cupcake pan.
– Spoon your filling into each of the pastry cups.
– Spoon over some gravy into each pastry cup.

– Using a pizza cutter, cut any leftover pastry into strips. Cover the tops of your mini pies.

– Bake for 18-20mins or until the tops or golden brown.

– Let them cool a little and use a knife to remove them from the pan.

– Enjoy!

These were super easy {and actually quite fun} to make. The prep time was only about 5-10min and baking time 18-20mins so in 30mins you could have a gorgeously tasty batch of really delicious mini chicken pot pies to indulge in and enjoy!

    These look delicious, Debs! I, too, have never made homemade pie in my life. I find them intimidating and end up always serving store-bought ones. This recipe, however, makes me want to break that habit. Like you said they’d be perfect for a big gathering, but even more so with the children. I’m sure your kids loved it.
