Recipe – Mini Chicken Pot Pies

Like anyone else, I love a good meat filled pie. Usually with a side order of potatoes, vegetables with a delicious helping of gravy. Plus, nothing beats hearing the crust crack as you cut into the top it of it too. Or is that just me?
But when it comes to catering for the masses at say, a party {or a small gathering of folk} for example, I like to make things smaller to make in bulk to serve up to my guests. So, this week’s recipe is for Mini Chicken pot pies.

If I’m honest – I have only ever, in my ‘almost’ 36 years on this planet, made one homemade pie. Isn’t that a travesty? Especially as a Mummy to a large family of mouths to feed. But, 2016 is to be the year to banish the fussy eaters in the family & get us all eating the same dish at the table each night. Or at least, that’s the plan. I guess starting small is also a good way to venture into those realms too. I hope.

So these ridiculously cute Chicken pot pies are sure to be a hit with the fam-bam. The shortcrust base with the succulently tasty chicken & vegetable filling – how could they possibly resist, right?

These look delicious, Debs! I, too, have never made homemade pie in my life. I find them intimidating and end up always serving store-bought ones. This recipe, however, makes me want to break that habit. Like you said they’d be perfect for a big gathering, but even more so with the children. I’m sure your kids loved it. Thanks for sharing with us and for hosting #mmwbh!
