Delight your children with this baked rice deliciousness!

Peru, Italy, Mexico, Thailand, no matter the country or the continent, rice has become the staple ingredient in many places and offers a wide diversity of dishes and recipes. However, when we think of rice, we tend to think of that hot, steaming risotto we could have for lunch. But there’s a reason why rice became so highly popular around the world and that’s because it can go places no other ingredients can.
Rice for lunch or dinner
On the one hand, rice is the perfect match for many dishes and it can be cooked in many ways so you can adapt the different recipes to your likings and availability. It can be steamed or boiled (note that you will need double the water when steaming it) and even fried or toasted. The most common way to make rice as a side dish is in the form of risotto, that is, cooking the rice in broth until the liquid has evaporated and the rice fully cooked.

On the other hand, rice offers the possibility of combining it with vegetables or grains and that makes it a healthy and filling option so much so that it doesn’t have to be a side dish, you can make it as the main dish.
Rice in beverages
That’s right, you haven’t seen the end of rice if you haven’t tried out a rice-based drink. In Mexico, there’s a classic beverage made of rice called horchata and it’s a great drink to have during a fresh spring lunch.
Moreover, some Asian countries have a rice-based wine whose making process is very similar to the making of beer, that is, through fermentation.
Rice in desserts
Last but not least, rice also offers a desserts section in the menu because, as if the previous possibilities hadn’t been enough, rice can also be baked and made into the last course of your meal. The key aspect, and the common element in whatever form the rice might take is that, no matter the place, you won’t find two recipes that are the same.

Fried, steamed or even bakes, as commonly used for desserts, rice makes it obvious that one single element combined with local ingredients and traditional ways of cooking can take just a thousand different shapes. When it comes to dessert, rice pudding is the most common one so, is finding a rice pudding recipe easy? It is, and this is not the exception, this one here is just one of the several options you’re going to find.
Ingredients:
- 1 cup of white rice.
- 4 cups of milk.
- ¾ cups of white sugar.
- 1 cup of black raisins.
- 1 egg.
- Cinnamon.
- Nutmeg.
- Vanilla extract.
- Salt.
Preparation:
- You’re going to start by greasing a wide pan, preferably one with a lid. You can use foil paper to cover it, in case yours doesn’t have a lid.
- Take a large mixing bowl and pour one cup of white rice and four cups of milk.
- Add one tablespoon of melted butter to the mix and stir to blend everything thoroughly.
- Add one teaspoon of nutmeg and one teaspoon cinnamon to the mix. Add one teaspoon of vanilla extract, and one of salt too.
- Whisk and make sure everything blends together.
- Preheat your oven to a high heat.
- Take your previously greased pan and pour the mix. Take the pan to the oven and cook for at least half an hour with the lid or tinfoil cover.
- In the meantime, take another bowl and pour a cup and a half of cream in it.
- Add a cup of raisins to the cream.
- Now, add ¾ cup of white sugar and mix everything together.
- In a separate container, beat up one egg until it’s creamy and then add it to the mix. Blend everything together using a whisk or a fork.
- After thirty minutes of cooking, take your pan out of the oven and add the second bowl mix on top. Now, mix everything together and make sure everything is evenly distributed.
- This time, do not cover the pan and take it back to the oven for an extra thirty minutes or until it gets the consistency you like.
- You can top everything by sprinkling some more nutmeg and cinnamon five minutes before the cooking is done.
