Slimming world recipe Thai fish cakesWhen I did Slimming world in 2013 I did pretty well-ish and managed to shift 1/2st. Which for my fat-hogging body was a really big achievement, but as time went on I couldn’t get to meetings due to the times and the darling man’s working hours, so I had to drop out.

I loved going to Slimming world, it was a real moral boost and our slimming world guru was a super positive and uplifting kinda gal. She was a hoot and you really did leave feeling positive and pretty fabulous. Which I think is something that you truly need when you’re trying to stick to a healthier lifestyle.

When I was there I managed to get two books; A Taste of Asia and The Little Book of Lunches.
I have loved using these little books and since having to leave Slimming world I have really used them to death. The first recipe I made was the Thai Fish cakes and I thought I would share the recipe with you guys because they are surprisingly scrumptious!
Slimming world recipe fish dish I made this as a small lunch for the darling man and I and I added some homemade chunky chips made in our Breville Health Fryer, low-fat coleslaw on a bed of salad with Thai sweet chilli sauce drizzled over it. It tasted pretty amazing and the perfect portion for a light lunch. Although I don’t think the darling man saw it that way, you’d think he was being starved! Ha! Whereas for me? It filled me rightly.

This dish was really scrumptious! I would certainly recommend giving it a try! Now bearing in mind the low-fat coleslaw and Thai sweet chilli sauce wasn’t on the recipe to add {nor was the chips for that matter, haha!} but hey! It was enjoyed and that’s the main thing!

Instructions
  1. 1. You can put all of your ingredients into a food processor if you have one, we don't so I just cut all of my ingredients up as small as my knives would allow to begin with.
  2. 2. Once everything was cut up I then put it all together and made two patties and popped them into our Breville Health Fryer.. The timer was set to 20 minutes.
  3. 3. Once ready then just pop them onto your plate, serve and enjoy!

    Hi Debs, it’s a shame you had to stop going to Slimming World. Being part of a group where everyone is striving for the same thing is the best support you can get.

    These fish cakes sound like the perfect summer lunch and can’t be too difficult to make…(??)…My husband will probably have the same reaction as yours did too!

    That looks yummy. The best part is the recipe is simple and easy to follow. You know, I love cole slaw and never really thought about making a healthier version of it. Can;t wait to test this out, Thanks for sharing!
