Pizza Quesadillas – a quick & simple dish for the family

Trying to find a dish for the whole family to enjoy in our house, isn’t the easiest of tasks. But I think I may have cracked it. We all love pizza. But having pizza after pizza can be a little boring, so I tried to find different ways to serve it up. And after falling down a Pinterest-rabbit hole {admit it, it’s happened to you too!} I came across Quesadillas. I’ve never really had Mexican food before, and neither have the kids, so I was excited to give pizza – a traditional Italian dish, a Mexican twist. 

Never having had Quesadillas before, I wasn’t even aware of how quickly they can be prepared & made. It’s incredibly quick, which makes me very happy. I mean, any dish that can be rustled up in ten minutes and avoids the drama and destruction of hangry children is a bonus in my book. In fact, these are so easy to make, the kids can even make them – with you doing the oven part, obviously – and enjoying their handy work.

I can see many more Quesadilla creations in our future, but for the beginning of our Mexican/Italian journey, I’ve made Pizza Quesadillas. With the help of the children of course! My 5yr old rarely lets me do anything without her – how dare I! 

I’ve also heard, that Quesadillas of any kind can be whipped up and put into school lunch boxes! So that’s a handy piece of information that will help massively when the kids go back to school after their summer holidays. So many ideas of what to fill them with, though! The possibilities are endless. However, for this post, Pizza Quesadillas are where it’s at!

These Pizza Quesadillas only need 3 simple ingredients; Tomato puree, mozzarella cheese & pepperoni. Obviously, for me personally, I would have added extras such as onions, scallions, a few peppers and chill flakes. But these were for the kids, and anything green on their pizza is a no-go!

Ingredients
Servings: Quesadillas
Instructions
  1. 1. Gather up all of your ingredients & preheat your oven to 180 degrees C.
  2. 2. Lay out your floury tortillas and spread over the tomato puree - leaving a slight gap around the edge.

  3. 3. Sprinkle with mozarella cheese {yum!}

  4. 4. Top with pepperoni {and maybe a little extra cheese}

  5. 5. Place another floury tortilla on top.
  6. 6. Pop in the oven for 5-10mins.
  7. 7. Bring out of the oven and cut the Quesadillas into 3 or 4 triangles. Serve immediately with a dip of your choice.
