Recipe – Puff Pastry Pizza

When I shared my New year goals for 2016 post recently, I did say that I would be sharing lots more recipe related posts with you guys; so welcome to my first one of the new year!

Today I’m going to share with you a deliciously light, tasty {and super easy recipe to bosh together} and that’s – Puff Pastry Pizza. Now, before you gasp “Puff pastry pizza!” & wondering if I’ve completely lost my rocker – just hear me out!

I had honestly never {in a million-zillion years} ever heard of making puff pastry pizza; until one day as I was lost in Pinterest heaven, I came across the recipe and obviously as amazed as I was, had to try it for myself! It’s incredibly easy to make, you can tweak it with whatever your families taste buds desire and it’s so light on the tummy that you’ll be left satisfied, your taste buds content minus the bloat that bread can sometimes bestow upon you!

My puff pastry pizza has just a simple mozzarella & pepperoni topping {because I have fussy children!} but it did taste amazing and the children loved it {and have requested more since!} so we’re onto a clear winner.
You can choose to make your own puff pastry recipe or, like me, who is super busy has no such time for that malarky and uses Just-roll ready to use puff pastry from the local supermarket!

Here’s what you’ll need:

Puff pastry {Homemade or store bought}
Mozzarella cheese
Pepperoni {or topping of choice!}
Tomato puree

This could NOT be easier.

Preheat your oven to 180 degrees C.

Roll out your puff pastry sheet onto your tray {I put it on some greaseproof paper before placing it on a baking tray}.

Add your tomato puree and spread it over the pastry sheet, leaving a 1cm gap around the edges.

Sprinkle on your cheese!

Add your pepperoni {or topping of choice!}

Pop it into the oven for 10-15mins or until the pastry is golden brown.
Super busy mum puff pastry pizzaPrepping this recipe takes minutes and you could have a deliciously light, crispy and super tasty dish in front of the family within 20 minutes. I’ve made this recipe a few times now and each time it has been raved about – I think the lightness of it is a really appealing factor, as well as being insanely flavoursome!
