Peppermint Chocolate Madeira Cake Recipe!

Last Wednesday saw the return of the much-loved show, The Great British Bake Off. If you’re anything like me and the rest of the country you’ll have whipped something up just for the new series being aired. We made a delicious batch of cupcakes and it was a rare occasion where all of the bums in the house were on the sofa to enjoy the show! It was all kinds of amazing.

We saw all of the new faces of this year’s contestants and even saw all of their scrumptious Madeira cake bakes. So having a little love of baking myself and being a blogger {obviously}, with a bunch of other gorgeous bloggers we’re all taking part in the Silver Mushroom Bake with Bake-off Campaign. Basically baking up treats from the show, sharing them on our blogs and there’s even a winner picked each week!

We decided to rustle up our Madeira with a little twist, adding in two of our favourite things. Chocolate & Peppermint. I never knew before watching last weeks shows that a Madeira could be anything more than a regular Madeira. But now I know it can be, that’s all levels of excitement.

6oz softened butter
6oz caster sugar
3 free-range eggs
9oz of self-raising flour
2-3 tsp of milk
1/2 cup of Cocoa powder {add more if you feel like it needs it}
Few droplets of Peppermint extract


First of all pop on your oven to 180 degrees {Gas mark 4}, then grease your cake tin. I used a loaf tin for this cake.

Cream together your butter and sugar until they are light and fluffy. Beat in your eggs, one at a time, and adding a tablespoon of flour each time to prevent curdling.

Sift the remaining flour with the milk and mix until well combined. Add your cocoa and peppermint and stir until well mixed together.

Pour the batter into your chosen cake tin, level out and pop it into the middle of your oven for 30-40mins until golden brown and your skewer when inserted into the cake, comes out clean.

Remove it from the oven and leave it to sit in the tin for a further ten minutes before removing and letting it cool completely on a wire rack.

This is totally optional, but when our cake was ready it felt like it lacked something. In the show, they pop little decor pieces on top and I really thought this cake needed something more. So I just melted up half a bar of Dr Oekters milk chocolate and drizzled it over the top. It was the perfect finish!

Tonights Week#2 of the #GBBO and we cannot wait! I think we have *just* enough of our Chocolate Peppermint Madiera cake left to divide among us for tonight’s show!!

    That looks really good! I will have to try that some time. I love to bake too but these days I just don’t have the time for it but this is definitely something I will have to try! Great post!
