A chocolate & vanilla cheesecake with Dr Oekter!

Ok, it’s no news that I love chocolate but I also love baking and ever since I started baking Dr Oekter has been a main constant throughout my baking timeline. Everything from chocolate stars, sprinkles and rice daisies but the one thing I’d never used, was their chocolate. So I thought being a cheesecake loving family, we’d have a go at using an ingredient such as Dr Oekter chocolate for our latest bake.

So collaborating with Tots 100 I was sent out a fabulous Dr Oekter hamper full of chocolate related goodies to make something for us to enjoy and you guys to drool over have a go at making yourself.

Now I used to have deep food rings to able me to make mini versions of this cheesecake however they seem to have gone walkabout, so I had to make one big chocolate & vanilla cheesecake rather than a selection of mini ones. That’s a shame isn’t it!

This recipe is a little different from the actual Dr Oekter Cheesecake recipe due to the inability to find a few ingredients local to myself. 

Here’s what you’ll need:
– 150g of digestive biscuits {crushed}
– 45g melted unsalted butter
– 110g caster sugar {however I used 11.5g of Candarel sweetener instead. As its 10g of Candarel per every 100g of sugar}
– 120ml of whipping cream
– 25g of Dr Oekter Fine Dark Cocoa Powder
– 200g of cream cheese

– Dr Oetker white chocolate hearts {for topping}
– Dr Oekter Fine Cooks white chocolate {for topping}

The How-to’s:
1. Crush your biscuits then mix it with your melted butter along with 1tsp of your sugar {I used candarel}, mix until well combined and add to your tin. Making sure you press the mixture down until its good and firmly pressed together. Pop it into the fridge until needed.

2. Whip up your cream until you get gloriously soft peaks and add your cocoa powder. Mix together until well combined.

3. Mix your cream cheese until smooth and soft along with the remaining sugar. Fold this into your cocoa and cream mixture and fold in together until well combined.

4. Pour the mixture over your biscuit base and decorate as you wish. Refrigerate until set. I like to leave mine over night.

Now I know I’m on slimming world and I have to be good, but my days…I cut out a wee slice of this beauty and I was so in love with how chocolaty and creamy it tasted too. I thought adding the dark cocoa powder would have made it quite sickly but I was so wrong. It was perfect!

After dinner tonight my I’ll be sharing it with my family and as big cheesecake lovers I’m sure they’ll enjoy this one more than the others. Its chocolate! How could you not!
